Per a local body shop, fiberglass hoods aren't as dimensionally stable as steel, so even if all the gaps are perfect after installation, they won't stay that way as heat and gravity take their toll. That may not be significant enough to matter to the racing ground [err, I mean the racing crowd], but for the average customer, it could be a problem.
I wouldn't be surprised if GM made the SS hood a little thicker than it needed to be just to avoid warranty cosmetic repairs. The main motivation for fiberglass was probably the crazy SS ram-air ducting, not weight.
